There is no difference in either case.
Just e-File your EAD application, mail copies of documents including expired EAD and take fingerprints,photos taken an local ASC.
I got a new EAD after a gap of 2 years without any problems.
Options:
1) Apply H1/L1 for spouse if she qualifies for one
2) Apply F1 for spouse (no easy to get as you have applied for GC)
3) You convert back H1 and she applies for H-4
4) Wait till your PD becomes current, she can apply for counsular Processing
5) Find a spouse from US
6) Head back...
I don't think there much diffrence between processing times of eFile v Paper.
Mine was eFiled on 2/6 approved on 3/24, card arrived on 3/28. You should get yours in 2 weeks most likely.

There are no salary limitations on AC21; however, the salary difference should not be too much to invoke suspiscion the job functions are entirely different from the original LC.

You can't get EB GC apporved by being self-employed, you need a fulltime job.

That is because filing AR-11 is not sufficient; you have to call USCIS customer service with your receipt number and change addresses on pending I-485 and other petitions.
You need to have your H1 for stamping, to prove you are on status, driver's license etc.

You can start second,third or n-th job in any field as long you have a primary job in the same classification as your LC/140 was approved for. There is no requirement to file AC-21 for part-time/secondary jobs.
