regarding letters, in addition to what I mentioned, do get the letters from leaders in your field.
I myself got letters from editor-in-chief/managing editors etc and also from people who cited my work....and I am sure it helped my case. I filed EB1A myself and never talked to any...

I am sure both will get through.
I did EB1A myself and also got my employer to file EB1B for me. Both were approved sometime back......and there was no question raised on EB1A.

-publications, citations, review of manuscripts would work in your favor

with just 2 publications, you will have to work really hard to make your petition impressive.
By the way, when did you have this publications....if its been a year or more....the USCIS would be more interested in hearing about their citations ! USCIS would be more inclined...
I agree with all others - this is a tough one.
Can you tell us a little about the persons who wrote the letters. I imagine that the ones with long CVs would be senior Professors etc...but you also mentioned there were a few with shorter CVs....can you please let us know about the background...
there is no absolutely no harm in trying ... so go ahead and give it a real shot.
however, I also agree with nightsman and llp1 that you will have to work hard to justify your case under EB1.

a) you have 5 publications - right ? I am assuming they were...
