You can use the valid H1 (Stamped ) to re-enter if 485 is not approved by the time you return or if its already approved, you will have to use the AP.
If you get the G cards before you return, make arrangements with somebody to check your mail box everyday and to post you the G cards to India. Meanwhile you too need to check you email from India for the approval notices.
Note: Make sure you will have your AP with you when you return.

This may not be correct. Once you applied for I-485, I believe, you can only travel using AP. Once you use AP for traveling you are on special mode where you cannot use H1 any more. I might be wrong too...;-) I would siggest to drop in an email your lawyer and let us know of what he says...;-)

You are not in non-immigration status any more. However, my lawyer told me USCIS intends not to be very specific on his issue. If you use AP, but still work for the same compnay on the same H1 visa, your H1 visa may be still valid. And use EAD maybe different from using AP. USCIS won't tell you extact yes or no on these issues. They leave it open to deal with it case by case.
By the orginal immigration law, if you file (submit) I-485 application, you lose non-immigration status. But later a memo from USCIS exclude certain visa holders such as H, J, and F. Otherwise, a lot of people with concurrently filed I-140/485 will lose legal status in US once their 140 is denied.
