Just reply to RFE based on what is asked.
Regarding your case, it is totally separate from RFE. Have an employment letter from new employer with title, job description, salary all same ( or similar) and then send the details separately citing AC21 Section 106.C. Please do this separately else you will confuse officer. I suggest you keep gap of 3 weeks after RFE is ACKed.
