Yes there is. The consular officers could always ask you to get your visa stamped from India as they cannot evaluate your credentials.
Your best bet would be to get a credentials evaluation done (which would equate your Btech degree with an equivalent US bachelors degree). That way you can...

I dont understand why you should be worried about getting your visa stamped from the Mumbai consulate when you have already been issued 2 H1Bs from that same consulate.
Did you mean to write your interview on 30 Jan is at some Canadian consulate?
