Copy should be fine. No need of original and copy of the FP should be fine. I had the same problem. There was no issue when I had my FP in New Roselle, NY.

When you join on EAD, your company needs the copy of the front and back side of EAD card. So I guess you need to wait to get your card. My case is like yours, dependent and I am joining the new Company. The new company asked me to get the copy of EAD card. Hope this answers your question.
