I think they can enter both names at Fingerprint time and new name can go under other names while app can still be under old name.

Good practice test for N400
If you want to change it during oath, you would have to mention it in N400. Changing it after passing the interview is next to impossible as they prepare Naturalization certificates in advance for oath day.

Yes, that is the only form
You just need to fill the form, attach the fee and certificates such as birth and marriage and file it. Once it gets approved..a month or so later you will need letter from NVC for further action.
Name Change is done at County Level
Most likely your County's Court (or Probate Court) will change the name.
Check their website. It might take a month or more to change the name.
Change it NOW
You should change it either now or after AOS, changing it in the middle of the process may cause issues.
Either change it before filing I-130, meaning - change name now and file I-130with your new legal name.
OR
File I-130 and 485 with old name and then when you have GC...
I am not sure...but this is what I would do if I were in your shoes..
I would use the new name...and take both passport and marriage certificate to my I-130 interview.
At most they would advise her to update the docs with new name.
