I think the current processing time is about 2-3 months for an APD. But with the current priority dates for every one, it might take a little longer.

My case got accepted with 4 papers and I was only a PhD student. I did NIW on my own. Read through the forum and other places to see how to present your case in a better way. It all boils down to how you present your case.
Your old letter should be fine as far it does not say EB-2 National interest waiver very explicitly. Also, see if your old letter mentions words needed for EB-1 like outstanding and extraordinary..it might help
