It is always best to check with the country consulate where you will be transiting through since different countries have different requirements. Recently a lot of changes have happened.
Wait for the approved letter in mail (original or courtsey copy) and then get an appointment through infopass to get your passport stamp.

The approval letter will indicate the things you require to take for passport stamping.
Like dazzling said, LUD can change within 30 to 60 days. I never saw a change in LUD for my MTR receipt number eventhough my 485 was approved within 14 days of receiving MTR...but every case is different.
When I contacted my congressman I was told that it will confuse the USCIS officials if you have more than one congressional inquiry into the case. Also, most congressmen will only help if you are from their congressional district.
It's not mandatory to send copy of new PP
I got my PP renewed in Sept 04. I plan to take both my PPs when I go for PP stamping...just so that I have the old one incase the officer wants to see it.
Long story short...no real need to let them know. If you are responding to an RFE etc, you can...
No...but make sure when you send documents when invoking AC-21 you send by registered mail with delivery confirmation and signature required. Also keep a copy of the AC21 letter.
Yes...you need to file MTR(Motion To Reopen). Contact your lawyer on what documents you need.
You need to send a cheque for about $110. Additional costs depend on how much your lawyer wants to charge you.

There is valid fear if you do decide to leave but to make the matters sweet you can offer to share the costs if it makes him happier. Most lawyers charge around $5K.
If you have a copy of the I-140 application, it should mention the job code (NAICS code). Once you have the job code you can get the details about the job description from USDOL website.
Don't have details about the DOL website.
Don't see a reason for a problem but that is only my best guess. Since this is an immigration matter why don't you pass this by your employing company's lawyer to make sure that it fits the bill.
Looking at your signature, you qualify for AC-21 (approved I-140 and I-485 oending for more than 180 days). Not sure about the one month break (consult a lawyer on this). When I invoked AC-21, on my lawyer's suggestion we notified USCIS of it. What I sent when invoking AC-21:

If the employer is deducting social security, tax etc from your paycheck, he is, by law, obligated to let you know the deductions. Maybe you can reword your request by stating that you need to find out what your deductions are so that you can plan ahead and a couple of paycheck stubs will help...
Should not be a problem...
I think you can mention your current employment should NOT be a problem since your GC application is for future employment. My case was similar to your except that my ex-employer applied for I-140/I-485 at the same time with an approved labor certification. Check out...
