I need submit evidence of physical presence in US on 12/21/00. I was told to submit one of the following below:

Taxes, Bank Statement, Utilities, Credit Card, School Transcript, and Medical Insurance.

I've been in the US for more than 20 years. Since I do not have any of the above information for that date, I was able to locate pay stubs from my old job in the US back in December 2000.

Pay stub #1
Period Ending: 12/17/2000
Pay Date: 12/20/2000

Pay stub #2
Period Ending: 12/24/2000
Pay Date: 12/27/2000

Do you think AOS will accept the above as proof of physical presence in the US on 12/21/2000??

P.S. I'm at the final stages of either being "approved" by USCIS. I have an appointment with my local office soon for completion of my application to Register for Permanent Resident or Adjust Status.

If the OP is AOSing as the sposue of a US citizen, I doubt this issue will be investigated.

This is a 245i case - that's why they need proof of physical presence on 12/21/00.

Either way, it's a non-issue unless the OP tries to lie about it. The AOS cannot be denied on the basis of unauthorized employment or illegal presence.
