Other than not committing a crime or having a record, does one need to start accumulating letters of recommendation/attesting good moral character to bring to the interview?

If you don´t have anything in your background you don´t have to take documentation about good moral character. if you are cleaned in your record that is a sample of your good moral character.

I guess you don´t have anything about traffic tickets, convictions or something like that. So in the good moral character field you are fine.

Traffic tickets do not preclude applicants from demonstrating good moral character.
 
you don't establish good moral character explicitly....it should be natural.

As long as you don't run into law (excluding minor traffic tickets), you should be fine.
 
Does USCIS care about recommendation letters even from the President to show one's moral character? I don't think so!
