No, EAD is not a green card. You're misrepresenting yourself and that could have consequences in your application.
Just don't know how HR interprets EAD? I got I-140 proved in 2005, and I-485 pending for about 5 months (may be no need to wait for 180 days because of EB2/NIW SELF-PETITIONED). The hiring manager talked about green card status requirement during the phone call, I just said yes to avoid more confusion about my status if I mentioned EAD. I don't think they know too much EAD.

I never mentioned EAD or GC. I just said "I do not require visa sponsorship". That typically eliminates any concerns that HR might have.

Do NOT say that you have a green card. Explain them your EAD, and what it means.

You can not say you are GC holder with pending application, I read it somewhere that this is a violation. As RealCanadian recommend just say I do not need visa and that is exactly what I did. I changed employer after 2 weeks from receiving the EAD.

When you hold EAD you cannot go for jobs whose minimum eligibility is Citizenship/GC.
