yes, you can change jobs with i-140 pending as long as the new position is same or similar.
it is more risky though because if your 140 is denied then 485 will be denied as well. note that once your 140 is approved only then portability will be determined.

I really don't need an EAD and my concern with I-485 is with so many applications being filed in the last 2 months.....it'll be ages before i get my green card even though my PD may stay current all the while. i feel CP may be quick but dont know?
