Only thing that you should make sure is that you're not paid less than the Prevailing Wages. As long as your salary is equal or more than the prevailing wages you're fine. If it goes under then you have a problem ... other experts may comment on this.

I think you'll be better off using EAD / AP. This will save you from the hastles of extensions. Also, for your visit to India, make sure it is under 180 days. I'm not sure but I think there is some restriction on the amount of time you can be out of country.

I don't think it should matter at all, now with the AC21 there are several people who change their jobs even before their GC is approved. As a matter of fact AC21 was brought in to stop the exploitation of employees by employers on the name of GC.

1. In my opinion you can, but check with your lawyer.
2. I don't think H1b approval notice is acceptable as a reason for applying EAD/AP, as I understand you need to send the copy of I485 Receipt Notice while filing for EAD/AP renewal (check with your lawyer to confirm).
