Hopefully, the August visa bulletin will be released today and if the EB3 world-wide date moves up by a few months, we'll all be happy. My money is on dates to move up by a couple of months (again, this is purely a guess).

I would wait
You can't go and give FP unless asked to. So, just sit tight and wait until your PD becomes current. Same with medic. If you are asked for a new set, then go ahead and get it done. Otherwise, just wait until dates become current.
Looks like EB3 Worldwide has finally moved past May 01, 2001 barrier and is now at July 01, 2001.
Hopefully, this trend will continue ..... I almost gave up on expecting any movement before the Oct. bulletin.

If I recall correctly, you need to wait until the priority dates becomes current for your catogery to apply for your I-485/AP/EAD.
You'll have to keep renewing your H1 in the mean time.

Your other alternative is to enroll full-time and file for AC-21 based on future employment.
I changed offices/jobs within the same company while my labor was still pending. As long as the company is willing to sponsor your I-140+485 under the old job, you should be fine. Smaller companies tend to be more flexible. Good luck.
