I am no authority on the subject, but as long as you and your company do not mess with the INS until your I-485 is approved, I don\'t think you will face any issue here.
If you have been waiting for over 90 days past passport stamping for your plastic card, you might try sending in this form (G-731)to the INS. It does not cost you anything (just a 34c stamp).

My experience
I came from India. AP was checked in Mumbai and in Paris. No one took any copies or asked for any copies. You need AP only for re-entry. It is the responsibility of the airline to make sure you have the correct papers to enter your destination country.

Our I-485s were approved on Jan 9, 2002. We were vacationing in India at that time. We entered the USA on Jan 13th using our APs.
