I know that multiple companies can sponsor H1 for an individual. Can the individual however work for multiple companies on H1? Example, can someone work full-time for company A and part time (20 hrs/week) for company B if he has valid H1 with both company A and company B? Can he get paychecks from both companies?

As long as both companies are aware and coopertin.. (Contractural issues only, no Immigration issues)

Is this really true? In that case, a non-immigrant can work more than 40 hours a week for different companies and get multiple paystubs on different H1's. I thought only Green Card holders could work for multiple companies.

Yes, jaxen is absolutely correct. You can work for multiple companies provided you have an H1 from all of them and they are all aware that you are doing so. GC holders can work for anyone without prior authorization and don't have any limitations - they can free lance, work part-time only for 1 hour a week etc etc. For more info, research any of the immigration-related websites in detail.
