--------- It seems to me you are filing your I-485 and her Dervative I-485 with your papers and you are also filing her EAD with form I-765.

---many apply and keep valid EAD as back up so that if H1 employer has no job or revoke the H1 then person can find job and work on EAD becasue at this time it is hard to find new employer to file H1 transfer.
what is the "Green Card work permit"??? if one has Green Card then one can work, if I-485 pending then one can get EAD for work. EAD does not speed up time to become citizens in the future. once I-485 gets approved one gets GC and then wait 5 years to apply for Citizenship. I could not understand what you have posted.You may as well do her Green Card work permit as well at the same time as if you plan to become citizens in the future it will only speed up the process not to mention the Green Card wait time itself.
