If my girlfriend enters the US on her Italian passport and we get married, but goes back to her country to file the paperwork, can she still come and visit while the paperwork is being processed?

Because it will be tough showing no immigrant intent at PoE. CP doesn't change that, even though she'll have to return to her home consulate/embassy for the interview.

(it probably is not impossible to visit, but the risk is pretty high she'll get sent straight home)

Plus they prolly won't even ask about immigrant visa.

I used VWP a couple of times, and I have never been asked about immigrant visa or marital status at POE.
