--Incorrect, it is not based on lawyer's request but your request based on your situation. You would only need a AP if you plan to travel outside of US without having a valid H1B stamp in your passport and don't want to apply for a extension/stamping in your home country consulate. AP is a travel document which would permit you inside the US at the POE without a H1 visa.

--EAD is "Employment Authorization Document". Can be used instead of H1B. With a EAD and approved I-140 and 180 days of 485 filing, you can switch jobs to a new employer without the need for a transfer of H1B. This provision is called AC21.
3. Which service center should I check with? I work in NY. My guess is Vermont?
--You are right, if your 485 is pending in Vermont Service Center, check Vermont Service Center.

Right now my question is which one is safe to work on (H1 or EAD)? which one I can use ? because I haven't got Paystub yet..so i wanted to use either of them to start with.
Please let me know the Pros and cons of using them if anyone knows??
