Is it ok if I get TN approved for one position, work on it for a while then switch to a different position in the same company?

from electrical engineering---> statistical analysis

Well many have done it, but the issue where a problem might occur is when your current TN runs out and you need to get another one. Then they might have questions if Statistical Analyst is somehow related to your degree. You could get your company when the time comes to form the letter to state it's a engineering type analyst or something.

When I was on a TN, I had a similar thing, they made up a title for my job, (geography related) so that it met the terms. Even though my new position was in geography, the original title as "analyst" could have caused some issues, so they just changed my title and never had a problem all the years I was on the TN with that new position.

Now I don't know the correct proceedure with regards to this at all, but seems to be pretty common place for this to happen...

it's OK, but before you do it you need another TN.

Your TN was awarded based on the narrow description of your job in the TN letter, and your qualifications.

You may find that you do not even qualify for a math job, with your engineering degree. We just had a thread on that, below.

My original title I was working under was GIS Tech (Geographical Info Sys) which meets "Geography" under the Urban Planning TN. The new position I took was Digital Imaging Tech, but we changed it to Geographical Imaging Tech so there wouldn't be any confusion when I applied for another TN.

I did not however get a new TN when I switched this job and just used the current one for the old job desc, of course back we weren't sure if I needed to. I then got another new position there and became an Imaging Analyst. Can't recall if we changed that official title either, once again I didn't get another TN for that position until my current one expired.

Was this the correct way to do it? Probably not, was I lucky to get away with it because my company and I didn't know the correct proceedure? Probably. I don't know about now, but it seemed pretty common place from many friends I knew that this would happen. So guess you can either take your chances, or be 100% safe and just get a new TN for the new position...
