Switch job after 180 days

I have now received my EAD. 180 days from the 485 filing date is in January 08.

I plan to switch job in Feb 08. Is it absolutely safe to switch jobs after the 180 days after 485 filing and the EAD has been received?

What would happen if my current employer withdraws the 140 after I switch to a new job in Feb 08?

Do you need proof of I140?

Do you need any proof of the approved I-140, like the receipt number or a photo copy of the approval, to change employers? I don't think my employer will give those details to me.
