Can I file I-485 first for myself and then, let's say 1-2 months later for the rest of the family, when they return to the US?
 
Normally yes, provided,

1- The priority date will remain current until the month they arrive, and
2- They enter the US on a dual intent visa (H, L)
 
Doesn't USCIS frown upon adjustment applicants who have just entered the US with a B1/B2 or F or J visa?

Yes, but that's different from requiring them to enter with an H/L. If someone has been in the US for a decent period of time in F status and later adjusts status, there's no problem.

You can, even after your I-485 get approved. I adjust to my family on month or so after I sent mine.
