My GF has a 10 year b2 visa. She has visited me once before on it, last year From March-Sept 2010.

About 6 months ago, we filed for a k1 visa, but lately we have decided we are too young to get married. (22,23). So I have sent letters to have the k1 canceled.

If over the summer, like in July or august, my gf wants to come spend time with me then go back home, will the POE give her problems because of the canceled k1? Will they even know abt it? I am worried abt this so much!

Potentially. I assume that you have no marriage plans at this time (no ring and no date). No one can say for sure what will happen. If she has a job, apartment lease, etc. she should bring copies of vacation approval notice, school tuition receipt, and whatever similar documents to demonstrate that she has obligations at her home that would make it unreasonable for her to overstay. I hope she is planning a short visit that is typical of a vacation from school or work for a young person.

Yes it is possible that the POE may have complete information about the cancelled K-1. Worst case, they might have partial information showing that the K-1 is still in progress. Regardless, she has to convince the officer at the POE that her visit is temporarily in nature. That is her best chance to gain entry as a visitor.
