Priority Dates at Mumbai Consulate-H1B Visa Stamping

I will be travelling to India in November with my fiance` and she needs to get my visa stamped while I am there. Based on the new rules, I have to take an online interview date and send it to through courier to the VFS application center. There is an option of getting a priority date if there is medical emergency, death or business emergency. Anyone has any experience with getting a priority date? What supporting documents would be good enough? Would a letter from the employer stating that they need you back because of being short-handed a good case? She is currently an Occupational Therapist. Any guidance or experiences would be greatly appreciated. Thanks.
