Is priority date individual benificiary specific or application type specific.

I want to file I-130 for sibling over 21 to secure a priority date and then switch over to thru-parents I-130 when they get their GC and thus speed up their GC process from >10 years to ~6 years.

is it possible and how do you grab the old priorty date.

I used to believe that one can port I-130s in FB cases, but I am not sure now. This might not be possible.

You cannot port the priority date of an I-130 if the old and new I-130's were filed by different petitioners.
