Don't your paystubs have a "year to date" total for each category (gross pay, withheld taxes and other deductions)? If so, so long as you have the stubs before and after the missing one it'll be no problem at al.
A smile a cancelled check would work just fine. I didnt have a paystub and I showed the interviewing officer a Cancelled check and he was more than ok with it.
