To adjust status your priority date must be current. You are not consider (by immigration law) an immediate relative of a USC so you must wait for a visa number to become available to you. You are in the third category (married sons and daughters of USC).

Uhmm there is a part that I am missing here? If you get out of status there is no way later on that you will be able to adjust when your date become current...unless you are an immediate relative of the USC (which by law you are not consider so) or a petition was filed in your behalf before April 2001 (and then when you adjust your status you pay a fine of 1K).
Check the instructions of the form I-485 who is eligible. You must mantain your own status (legally) in the US all this time.
