I would write "None" or "N/A". I just got done filling our these forms for my mom. She used to work long time back but now she is old and stays at home. I wrote either "None" or "N/A" in the application. Let me know if you have any additional questions.
By writing retired, you are asking for trouble. USCIS needs an excuse to send out RFE's....trust me. You never know USCIS could ask for her previous employment details such as duration and last pay stubs.....who knows. If I were you, I would keep it simple. Write "N/A" or "None", doesn't matter.
