If a person working on EAD (and H1 became void when he changed employer) loses job, can he stay in USA without a job for a month or so? is it legally permissible?

Generally, yes.

Not so sure. The unemployment benefits is generally for people with Permanent Resident or Citizen status from my understanding. And EAD though gives us the privilege of switching employers, I dont think one can claim these benefits.

But again, I could be wrong, if so any legal mind please correct me.

Not correct. The main criteria for UI is that one be eligible to work, which an EAD provides.
 
I am afraid the answer is "NO". One has to be a Permanent Resident to Claim UI. One has to show the proof of Permanent Residency.
EAD allows to work with one or more employers and to be self-employed.

Wrong. One can collect UI on EAD.

He can stay without a job temporarily, but if he doesn't find a "same or similar" (AC21) job or job offer before USCIS finds out about the situation, they can deny the I-485.
