1. Almost nothing, unless you have been a GC holder for 5 years or become a US citizen.

2. Yes.

3 and 4: You're not eligible for food stamps or Medicaid now. See point #1. You'll need to apply for private health insurance, either on your own or through an employer who provides it. If you attend college you can probably get inexpensive insurance through the college (they'll have a group policy that covers most or all students and you can buy into it).

5. You need to work for a certain amount of time and get laid off, in order to collect unemployment benefits. Different states have different rules on how long you must work.

6. At this time, child care benefits would be available only for her US citizen children, if she has any. Again, see point #1. And such benefits are tightly restricted and may be unavailable even if she becomes a US citizen or has a citizen child.

7. If you're here as a refugee, you can get subsidized housing for a few months. Apart from that, see #1.

If you've moved to the US expecting government benefits, you've come to the wrong country. The US provides the lowest or nearly the lowest set of public benefits for any G8 country, and benefit restrictions are much tighter for noncitizens. Unless you're a refugee, they expect you to have a relative or friend who will support you financially, or that you will support yourself. That's why they required the Affidavit of Support during the green card process.
