I-485 vs V visa

Maybe someone can give me a good advice.

I'm GC holder awaiting citizenship oath ceremony for more than a year now (yes, we filed a mandamus but still are waiting). Meanwhile, my wife OPT is expiring next March. Based on different recommendations, we haven't filed I-485 so far - the idea was that for wife of US citizen it would be simpler and faster.

We don't want to loose her legal status and permission to work so what are our options? Can we file for V Visa for her as a wife of permanent resident? Or should we wait until my citizenship will come true and file 485?

--- why you use word"we", why cant write "she has not submited I-485. many post the questions with word"we" one need to post his her individual situation. regarding OPT others will post
