H1B Transfer w/o recent pay stub

I was on F1/OPT. I recently got my H1B approved. There was a gap between OPT expiry and H1B approval. My employer (a consulting company) that filed for H1B has not found work for me yet and I had not discussed/negotiated about bench pay when I accepted an offer.

So, basically I do not have recent pay stub. I am sitting home wihtout work, inspite of having work authorization. My questions is, can I transfer my H1B visa to other employer? Will that create any problem for not having recent pay stub?

If you can not provide paystub, CIS can not verify you have been on status. If you were luckly, you get transfer done, but if CIS considered you were not on status, they approve your H1 without I-94. You must travel in that case.
 
So, in case if one has applied for Visa transfer w/o recent paystubs, and he goes out of US and comes back with the old H1 stamp in the passport and new H1 approval, is there a potential risk? will he be considered out of status?
Also can a person in this case go to Canada and come back?
Please advise...
