My current status is
I-140 - Approved
EAD - Have my EAD and wife is attached to my application.

Can I take a full-time course such as MBA ? Would it affect my EAD/GC ?

Many places will not accept EAD with pending GC to be enrolled. Check with the place you want to join.

That's discrimination. The person is legally able to study, and the institution is discriminating based on immigration status.
