If going for a new job after 6 months of filing for I-485, is there any new paper work that needs to be filed with INS indicating change of employers. How does INS know if the applicant found work in a different line of work then what was stated on LC and I140 approvals.

If your old employer writes to INS
then INS might issue an employment RFE to which you can send the new job details.
Some cases are randomly transferred to local INS and the local INS officer can ask you to produce any document including proof of continuing employment with sponsoring employer.
