I am going to visit my family in Canada during Chinese New Year. Is it a reason compelling enough for my AP application?

Apart from a separate sheet(s) of explanation, do I need to submit any documents to support my AP application?

As long as you have 485 pending, you qualify.. Any reason is good enough.... don't have to send anything like invitation... you can say you want to see family/friends etc.... I'm not sure if this is asked or not.

If you have a pending i-485, you are qualified for an AP document.
HOWEVER, when you come back to the U.S. with an advanced parol document, the USCIS in the border, look if you were in the U.S illegal prior to filing the i485.
If you were illegal prior to filing the i-485, the chances that they're going to let you in are very low.
I have been always legal prior to filing my i-485. last year my brother passed away, I had to leave the country to the funeral. When I get back, they asked me to go to the room (the investigation room). I told the officer that I had to leave the U.S because my brother had passed away. He didn't ask me for the death certificate and he let me in without any problems.
 
Back 2003, I submitted nothing apart from the I-131 form. In those days, Boston DO processed APs on the spot. I was a K-1 based AOS applicant and got two 6 month long APs. I mentioned "Honeymooning in Aus/NZ" on the first one and "Visiting folks in Canada" on the second one.

"Illegal" has no meaning in immigration law. The re-entry bars are non-discretionary and are keyed on illegal presence, which has a very specific meaning.
