I am going for concurrent filing & am not expected to get married in next 6 months.
Since I'll be portable as per AC-21 after 6 months of filing.

If you join new employer by H1 transfer then no need of same similar job while working on H1 with new employer but if it matches much better. If you join by EAD then find same/similar job once I-140 gets approved and I-485 pending more than 180 days. Better maintain H1 status till your I-140 gets approved
How would it go for the future spouse? Will my leaving of current employer impact 485 of the future spouse?
------- No problem, just maintain H1 status and don’t use EAD while you go out and get married YOU should be on H1 status so that your wife can get H4 visa stamp and once she enters US on H4 visa then file her I-485 that will be joined with yourI-485 pending file. Your job change or use of AC21 has nothing to do with your spouse. Be on H1 status even if you change employer after you are eligible for AC21 then also join new employer with H1 transfer so that your wife can enter on H4 and H1 status is better for you because if due to any reason I-140 is denied then your EAD, AP I-485 all will be denied and you will have no status in US, if you have H1 status then you can work or remain in US till the expiry of H1 status
