About to send N-400, few questions, please help

You are allowed to apply when you are 90 days short of completing the continuous residence requirement. So you can apply right now; you don't need to wait until March 11 when you've completed the full 5 years.

You don't need tax transcripts from more than 5 years ago. So only get them for 2006 and after. In your case they probably won't ask for your transcripts, given when your long trips ended. So don't send them with the application; bring them to the interview just in case.

Hey Thanks for a prompt reply - couple more questions: 1) Are there Tax transcripts for the state government too or only federal 2) Do we have to send both our applciations in the same envelope when we post our N-400's or do we have to post them separately? 3) what is the prefered way of posting? USPS - speed post, certified post?

If you have been away for a few months (more than six months) you will need to prove that you have not abandoned your physical residency. To prove that you have maintained residency, it is a good idea to keep records showing that you are physically present in the US – bank statements, leases, receipts, and school and work records can all be helpful in this regard.
Proof of maintaining residency is not dependent on being physically present in the US, but rather on the ties you have in the US.
