a question about quiting job after I-140 is approved

My I140 is approved. Both my wife's and mine I-485s are pending. ( I am the principle applicant). If my wife quit her job now (she is currently holding H1B), will this affect her I485 approval?

If she need to work later on, should she get the EAD before she quite job (H1B) or she can apply for EAD later on whenever she decides to work again?

Not at all.

She can apply for the EAD whenever she wants, so long as she has a pending I-485. Since there is some lead time taken to get the EAD in hand, she should apply 60-90 days before she starts looking for work.
