I heared that I-140 approved at EB2 but I-485 could under EB3 or EB2. But if your I-140 under EB3, you can not file I-485 under EB2.
Check with your layer to make sure your are under EB-2 first.

If your I-485 was approved, that means you can change to any employer. AC21 is for people only have I-140 approved and I-485 has pended for more tyhan 180 days.
Since you have previous I-140 approved and I-485 pending for more than 180 days, you can use AC21 if you find same or similiar job, so you can file MTR to reopen this case. You should be successful if you do so.
