i think the simple way is to have her joining you on H4 and apply for AOS before you use the EAD. However, if you're affected by the recent event of PD retrogression, this option may not be as simple as it sounds.

You may consider rescheduling your FP2. In theory, your case can be approved any time after giving the fingerprint, and you don't want that to happen before you file for the bride.

My wife was in a similar situation. After consulting an attorney and an immigration officer at the local USCIS, we decided that best choice was to have her back before the expiration of the AP. I personally don't recommend any other "options", unless you really have a crave for adrenaline...
there should be one more option "You have received an approval letter or I-797C from the Service Center or local office instructing you to come into the office for ADIT processing/passport stamp."

I think you should be fine. Your LUD change is very likely caused by the RFE received by USCIS.
LUD change is like flirting--it's not exactly the thing you want.

This is my impression of the "meaning" of LUD changes:
Many consecutive LUD changes are associated with EAD/AP approval or RFE/FP received at USCIS.
If you're not expecting any of these (i.e. EAD, AP, etc) consecutive LUD changes without approval could be a sign for issuing...
