Once you applied for I-485 you have to wait 180 days to change your job. Be sure that your job title and description are very similar to the current one. The officer may have a problem with a job at the university versus industry. That will be for sure a question in the interview.

For the part 5 I would say: scientist - PhD Student, or junior scientist. What kind of description do you have in your contract? You don't need to fill out the part 6 if you want to apply for NIW. NIW is about waiver of the job offer requirement. Attached is the correct ETA 750B form.
