I am in the third year of the required 5 year stay after permanent residency. I have gotten a really good job offer in Aussie after the US branch of my company went under.
Is there a way I can take up this offer without jeopardizing my ability to apply for citizenship 2 years from now

Probably not. The immediate beneficiary (your child) was a US citizen. Be prepared to justify your WIC eligibility with your paystubs (and child's birth certificate) at AOS interview.

Frequent changing of jobs, while legal, will delay your processing coz your file will be shuffled back and forth. One year from RD is already a little long
The card supercedes the approval notice The notice is routine. I would be worried if you received approval notice but no card (after 30 days). Relax and enjoy your card
You do not need EAD. GC replaces EAD permanently (unless you commit a felony)

I received the following message today. I think you should receive a similar message today or tomorrow:

Application Type: I485 ...
You will receive card ordered notice first. Then card mailed soon after.
You may have to wait in the cue for the card to be ordered, though.
If you need to travel you can have infopass stamp your psport. This will not be done after LUD changes to "card ordered"
