Likely you will need to fulfill the 2 year requirement - although this can be waived in certain circumstances. It may, however, not be possible to get it waived with intent to immigrate.
Be honest
my advice in these situations is to be honest and to be prepared. If you're not going to be honest, however, you should be tenfold more prepared to back up your story, cause if they ask questions, you could get caught in a lie just by not knowing what to say.
It's Their M.O.
This sounds like an unfortunate situation that was of no fault of your own, but which you're going to have to fix because they hold all the cards. This seems to be the MO of the USCIS
J1 extension info

Counter suit
You might want to follow roc's advice. If you can prove they broke the law somehow, or you are sure that they did, you can threaten them with a counter suit, which they will want to avoid.
It's not what you know, ...
It's what you can prove. Or at least what you can show solid evidence for. A deed to a house, letters from banks that show mortgage, car payments, social commitments, paycheck form your job... basically anything you might be reluctant to walk away from.
If you're getting married to a USC, you'll need to file for a different type of visa (K). But you should make sure that you don't violate the terms of your O1.
I would be weary of any company that seems to be making a business out of sponsoring people. It looks like you may need a new visa for a new employer. More info can be found here: http://oisss.unc.edu/academic_staff/o.html
From what everyone's saying, it sounds like they're just being ultra careful and classifying anyone even remotely suspicious (justification might be non existent), into the terrorist bin. In the case of the poster, all should be OK.
