    You should be fine as long as you have your AP. Don't see a problem as long as you reply to the RFE before Sep 6th! I would say Fedex it to make sure it reaches before Sep 6th.

    GC is for future employment. I feel just reply for the RFE and you should be fine. Use AC21. It is risky but not impossible. No harm in applying for another H1 as backup!

    My AR-11 saga (May be reason for my 485 delay)

    The letter clearly states that if you have already filed your AR-11 form, ignore this letter. We also got the same letter and ignored it. We got approved last week, so nothing to worry about.

    RFE on I-485

    Not sure if this is a trend but am seeing a lot of WACs in the range WAC-02-80 to WAC-02-100 getting RFEs. Where as all march/april/may 02 filers are getting approved without RFEs. Seems the person handling the Jan 02 filers bundle is more cautious and inclined towards issuing RFEs.
