Hi,

I wish to apply for my Mother's GC, she's planning to visit US on a tourist visa shortly, please let me know the documents needed from her side so we can start AOS (I-485) process on our own.

Also, she doesn't have a birth certificate, does she need to get an affidavit from India?

First of all, what you are trying to do is illegal. You are trying to missuse the system, CP is the right way. I am not telling you what to do. Do what every you think is right.
She need to get a Non Availability Of birth Certificate, and 2 affidavits, Marriage certificate, Rashen card from india,
Do you have her name listed on your Birth Certificate? If not she needs to bring lot of evidince showing your relation ship, Like Bank statements, mail comming to the same address. the older dated the documents the better.
 
Since there is intent to immigrate, prior to this "visit", please follow the consular processing route and not the AOS route.

Once she comes here to the US, filing for AOS is that illegal?

Consular processing route, how long does it take? and what is the procedure for filing for consular processing.

No, it is not illegal. However there is always a chance of being accused of misrepresentation/fraud when one AOSes from B-2 status. Why take that risk? AOS from B-2 should be in cases where there was a genuine change of intention AFTER entering the US for a visit. That is not applicable here.

Consular processing should take under 12 months from start to finish for your mother.

Once she comes here to the US, filing for AOS is that illegal?
