Changing career after Green Card

I applied for employment based green card. I am in Adjustment of Status right now and hopefully mine will be "current" by the end of the year.

My question is this: Is it possible to change my career after getting a GC? I understand that it is recommended to stay at the same job for 6-12 months after getting a GC. But my question is, not only changing my job but what if I want to change the nature of my job to something entirely different? I am currently working in the IT field. What if I want to be, let's say, a gardener? Is it going to be a problem when I renew my green card in 10 years?

If you don't ever work in the IT field after getting the green card, that could be a big problem in the future, particularly for citizenship. But if you're talking about changing careers 6-12 months after green card approval, that should be OK.

And you probably already know that if you change your career before the green card is approved, your green card could be denied because you won't have AC21 protection.
 
No. A career change is no different than a job change.

That a blanket statement that is often false when employment-based green cards are involved. It would help if you clarified the context you're referring to; I'm sure you know about the "same or similar" requirements of AC21.
