Changing status from H1 to EAD

Here is the situation, my wife was on H4 and applied for her H1B through a consultant and got the H1B. Last month she got her EAD also but she is not on any project, so she is not getting any pay stub and all. So we were thinking of moving her status from H1B to EAD.

How can we change the status ? What if she works somewhere and they pay her in cash and we show that money as our income in the tax return, will that change her status or we need a W2 form?

I will appreciate if someone can suggest some options to change the status.

I guess she can always re-enter US with her AP and that will invalidate her H1 and put her in "Adjustee" status. Otherwise she can find another job and present her EAD when she starts working and that should do the trick.
 
Can you use EAD for self employment purpose ? like can she show that she is doing baby sitting or any other job? But in that situation she won't get a W2 form , the only proof she will have, will be the cheque she will get.

Is this a possible way to change the status from H1 to EAD or even to use the EAD?
 
TheRealCanadian thank you very much for your answers and suggestions. One more question. Do we need to fillout I-9 form with my wife's current employer or its not required ?
