When does 180-Day counter for AC21 start ? Is it after 485 has been filed or after we receive receipt notice for 485 ?

If its after 485 been filed, how is it tracked , what i mean - is there any documented information to identify this is the date when 485 was filed ?

When it's filed. The date you receive your receipt notice has no legal significance. An I-485 still exists even if you never received the receipt.

If I receive the receipt after two months of filing and receipt date showing two months after file date. Then what proof should I show for AC21 as 180 days?

That was original question how to document exact filing date other than receipt date. Is there assumption that receipt date would be within 2 weeks or so of apply date ? How soon one gets receipt date after applying 485 I know its difficult to answer this one - but thoughts would be appreciated ?
