Working overseas while I485 is pending

I will appreciate if anybody can provide an insight to my dilemma:
My I485 is pending since July 2004. I have been through 4AP and 4 EAD.
I got a very tempting job offer overseas and I am considering all the pro and cons.
Will I be safe to leave US while my I485 is pending provided I can get my employer to give me a letter stating that they will hire me again once my GC is approved? I do not want to switch from AOS to a consular processing! To my knowledge the GC is for a future job, so I am thinking this should not be a problem. Am I missing anything?
 
I already have an AP that expires July 2008.
How will a new AP help me? Do I have to inform USCIS that I will be residing outside US for extended period of time?
